
Each day people are unknowingly poisoning themselves with the foods they eat.
It is estimated that 95 out of every 100 people in industrialized nations suffer from some type of adverse food reaction. There are over 50 medical conditions that have been associated with food allergies (see table below) and many more persistent chronic symptoms can be manifestations of food sensitivities.
Food allergies and sensitivities are very common in today’s society. Sensitivities are abnormal reactions to food or components of food that do not involve the immune system, but involve the body as a whole. Food sensitivities can also occur in all kinds of food. The most common foods tend to be wheat, dairy, sugar, egg, soy, corn and nuts however, allergies and sensitivities can happen in any kind of food even vegetables and fruits. There are three types of food sensitivities:
1. Biochemical / Metabolic Reaction
These reactions occur when a person is genetically unable to properly metabolize a food component. This includes lactose intolerance (inability to metabolize lactose) and celiac disease (inability to metabolize gluten) which is different from dairy and wheat allergies.
2. Food Sensitivity
This type of sensitivity occurs due to an abnormal response of the body to a food or food component. Symptoms can range from mild and moderate to severe. This is the most common type of food allergy.
3. Anaphylactoid Response
This type of reaction produces the same release of histamine as a true food allergy, but it does not involve the immune system. It is not the same as an anaphylactic reaction but symptomatically it is very similar.
