
KOHLRABI
Try a different vegetable this summer. Here I am experimenting with Kohlrabi. Kohlarabi is a root vegetable. High in Vitamin C, which will help the body absorb iron. It is rich in potassium, vitamin A, folic acid, and some calcium. It also has the nutrient choline, which is good for brain health.
The texture of Kohlrabi is almost like a potatoe. I used all parts of the plant. The leaves I sliced in thin slices and marianated them overnight in lemon juice, olive oil, sea salt, garlic. The next day everyone had some Kohlrabi leaves in their lunches. I love it. My family comments were, it was a bit more dense than they were used to with a green leafy vegetable, but they didn't mind it.
With the root or the vegetable, again I sliced it in thin slices and saute it in butter and leeks (from my garden). You can use green onlons, onions, garlic. What ever you fancy at the moment. With me it's whatever is in my fridge or garden at the time, I just make it work.
Try eating a different vegetable this summer - Kohlrabi - before you know it they'll all be gone.
