Cool Cucumbers

I am always amazed how from a little seed, you get a huge vegetable or fruit.  This year most of my garden was started in my house by a little seed.  I am also amazed how well the garden is doing inspite of the low rain levels.  One of the things I enjoy is to be able to go out my back door clip off a few fresh cucumbers and eat or prepare them right then.  Tonight was no different.  Try your hand at making Tzatziki.  It is very easy to prepare and makes a really nice dip.  I love this stuff.

Prepare in advance.  Get a cheese cloth from the dollar store.  Cut a nice piece about 6 to 8 inches long.  Place it on a strainer.  Place the strainer on a glass bowl.  Pour about 2 cups of plain (nothing else added) yogurt on the cheese cloth.  Just let it sit on the counter while you go do other things.  Give it at least 1 to 2 hours to strain.  
 
Once you are ready to make the Tzatziki.  Squeeze the cheesecloth for any access liquid.  The liquid is whey.  You can use that for your protein drink in the morning.   Inside the cheesecloth is yogurt cheese.  That's what you want.
 
Take this yogurt cheese, add to it 1 cup of fresh grated cucumbers, 1 or 2 minced garlic (depending on the size and how much you like garlic), 1/2 tsp dill weed, sea salt to taste.   That is it!  A great way to enjoy your cool cucumber. 
 
Use Tzatziki as a dip with other cut up vegetables, pita bread or crackers.
