Ohhh How Sweet

Sweet Potato Arame Salad

Did you know you can eat sweet potatoes raw?  Yes you can.  In this delicious nutrient dense salad, that's the main ingredient Sweet Potato.  Sweet Potato is high in vitamin A.  Vitamin A helps with night vision.   Interesting never thought about this until now.  This is a fall/winter vegetable.  There is less light in these months.  So eat lots of sweet potatoes to help see during the darker months.  

Sweet potatoes are also a warming and comfort food which also helps in the colder weather.  Add a nice comfort soup like squash soup and dinner is served.

Along with the sweet potatoes, sea vegetables are added.  Sea vegetables are a great addition to any meal.  They are loaded with iodine.  Iodine helps support the thyroid, along with the vitamin A from sweet potato the thyroid gets a great boosting support.  

Sweet Potato Arame Salad (with some variations from the original)

1/3 cup arame sea vegetable, (measure dry)         3/4 cup water
1/2 cup fresh lemon juice                                     4 cups sweet potato, grated
2 cups apples, cut in matchsticks                          1/2 cup sliced celery
2 Tbs grated ginger                                             1/4 cup toasted sesame seeds
2 Tbsp maple syrup                                             3 Tbsp Tamari
2 Tbsp olive oil

I added 1/2 cup of dandelion leaves, sliced.  (Lemon juice and dandelion a great liver supporter.  Wow this one little salad just supported my thyroid and my liver.)

Rinse and soak arame in 3/4 cup of water to soften.  Shred or grate the sweet potato.  Place in a large salad bowl.  Slice celery in thin diagonal slices and add to salad bowl.  Add sliced apples, grated ginger, and sesame seeds.  In a small glass jar or small bowl, put together maple syrup, tamari, olive oil, and lemon juice.  Mix in salad.  Drain sea vegetables and toss in to salad.  

Bet you can't just eat one bowl.  So refreshing and invigorating for the winter months.
